Honey Candied Ginger

This is the easiest recipe ever!  I don’t like a very strong ginger flavour but this is very subtle and with the honey, it’s absolutely yummy.  A great warming drink in winter, warms the body and soothes the throat.  Add a squeeze of lemon for a flavour lift and even more health benefits!  Chill in the fridge for a refreshing summer drink.  Honey candied ginger is my new favourite drink!

No preservatives or additives.

Ingredients

  • 200g fresh gingerhoney candied ginger in jar
  • 400ml water
  • 200ml cups honey

Method

  • Peel ginger and slice thinly.
  • Boil ginger in 2  water for 10 minutes.  Cover and reduce to a simmer for 20 minutes. Uncover and continue to simmer until tender (time depends on the thickness of your ginger slices and how tender you want it). You can drain some of the water if you want the syrup to be thicker – leave at least 1/4 cup of water.
  • Add honey.  After it starts to bubble, simmer uncovered over low heat for another 15 – 20 minutes or until the ginger and syrup are the colour and consistency you want.  Stir occasionally so it doesn’t burn.
  • Pour contents of the pot into a clean glass jar to store.  You can store the ginger and the syrup separately if you want.  I have a big jar at home and have a little jar at work.

You can store in the fridge for several months. Make smaller batches if you want.  Adjust the recipe to suit your taste.  So easy and so versatile.

You can use the ginger in other recipes like cookies or muffins.  The ginger is delicious dipped in chocolate or as a topping on chocolate bark.  Or eat a few slices as a digestive when you’ve overindulged.  You can also use the syrup as a natural sweetener.  I use the ginger and syrup to make a hot drink.  Super yummy in warm milk – add turmeric for a mild golden milk.
